This wine comes from the Valpolicella region near Verona. It is made primarily from Corvina grapes (65%), plus Rondinella and Corvinone and other local grapes. The grapes are grown at an altitude of 450 meters and are selected and harvested by hand in late September. This Valpolicella is made using the Ripasso technique, where the wine is macerated a second time for about 15-20 days on the marc of the Amarone just drawn to add depth and complexity. For this reason, you can think of it as a "mini-Amarone". It is then matured for 18 months in large oak barrels of 500-1000 liters, following which it is aged further in bottle before release. The wine has an Intense red color with garnet reflections. The nose brings red fruits like currants and blackberries, with hints of violet, plum and spices. On the palate we can find fresh notes of red berries, with velvety, delicate, and balanced tannins. It matches perfectly with mushroom risotto, red meat such as barbecue steak, or white meat including game, also perfect with medium and hard cheeses.
